As a mum of 4 I’m usually well organised and meal plans are done in advance. Sometimes though, it gets to lunch time and I have to make something up with what’s in the fridge. Today’s creation is a slimming world friendly spicy vegetable stir fry.
1 green pepper, chopped
1 Orange pepper, chopped
1 onion, diced
spring onions, chopped
1 courgette, sliced
1 head of romain lettuce, shredded
2 carrots, cut into batons
2 nests of dried noodles
100ml vegetable stock
1/2tsp chilli flakes
1 tsp Chinese 5 spice
1 tsp Schwartz classic BBQ seasoning
1tbsp teriyaki sauce
1tbsp oyster sauce
few good shakes of light soy sauce (or to taste)
Cook noodles according to packet instructions.
stir fry all the vegetables in frylight
add the stock, chilli flakes, Chinese 5 spice, BBQ seasoning, teriyaki sauce, oyster sauce and soy sauce.
cook until stock reduces by half add noodles and mix well with sauce and vegetables.
serve and enjoy.
Really delicious, great for using up vegetables in bottom of fridge and syn free for those who follow slimming world! You can also add any meat for a more substantial meal ❤️
