Twice baked tuna melt jacket potatoes

imageTea tonight was another store cupboard stable invention.  It was actually really delicious and syn free on slimming world using healthy extra A of cheese.

Serves 4

4 baking potatoes

2 sweet potatoes

frylight

salt

x1  tin of tuna in water or brine

1/2 tin sweetcorn

1 large red onion, diced

1/2 tub quark

seasoning

120g mature cheddar (x4 healthy extra A choices)

Salad to serve

prick both the potatoes and sweet potatoes several times and place on a baking tray. Spray with frylight and season with salt. Bake for 1 hour at 200c until centres are soft and skin is crispy.

remove from oven, carefully cut potatoes in half so as not to damage the potato skin and scoop out the centres and place in bowl. Keep the potato skins. Add the centres of the sweet potatoes and discard the sweet potato skins.

mash the potato and sweet potato together and then mix in the tuna, sweet corn, red onion, quark and combine well. Season to taste.

Return the tuna filling to the potato skins and divide the cheese equally between the 8 potato halves.

Return to 200 c oven and bake for 15-20 mins until cheese is melted and bubbling.

Serve 2 halves per person with plenty of salad and enjoy. Syn free + healthy extra A choice.
